ABSTRAKPenelitian penentuan kadar formaldehid dalam ikan kerapu macan (Ephinephelus fuscoguttatus) telah dilakukan untuk mengetahui kadar formaldehid yang terbentuk dalam ikan selama penyimpanan beku. Dalam penelitian ini ikan dalam keadaan hidup dimatikan dengan menggunakan es curah kemudian disimpan di dalam Freezer selama 10, 12 dan 14 hari pada suhu beku. Pengamatan dilakukan terhadap kadar formaldehid yang terbentuk dengan cara Spike dan Non-spike, serta uji statistik untuk mengetahui terdapat perbedaan yang signifikan atau tidak antara variasi waktu penyimpanan. Hasil pengamatan menunjukkan bahwa formaldehid sudah terdeteksi pada hari ke 10 sebesar 55 ppm untuk sampel Non-spike dan 80,1 ppm untuk sampel Spike, selanjutnya mengalami peningkatan kadar formaldehid sampai akhir penyimpanan. Berdasarkan uji statistik kedua sampel menyatakan angka z output > z tabel, maka H1 diterima dan Ho ditolak yang artinya terdapat perbedaan nyata kadar formaldehid antara waktu penyimpanan 10, 12 dan 14 hari.Kata kunci : Formaldehid, Ephinephelus Fuscoguttatus, Uji statistikABSTRACTDetermination of formaldehyde study of grouper (Ephinephelus fuscoguttatus) has been conducted to determine the concentration of formaldehyde that is formed fish during frozen storage. In this study fresh fish turned off by using the bulk ice and then stored in the freezer for 10, 12 and 14 days. Observations were made of the levels of formaldehyde that is formed by Spike and the Non-Spike, as well as statistical tests to determine significant differences between time storage above. The results showed that formaldehyde is detected at day 10 that was 55 ppm and 80.1 ppm for Non-Spike and Spike samples respectively. Next that was found increasing of formaldehyde until the end of storage. Based on the second statistical test samples stating number of output z > z table, then H1 is accepted and Ho is rejected which means that there are real differences in the levels of formaldehyde between storage time 10, 12 and 14 days.Keywords: formaldehyde, Ephinephelus Fuscoguttatus, statistic uji
