Scsebagai Pembimbing Utama dan Raida Agustina, S.TP., M.Sc sebagai Pembimbing Anggota.RINGKASANKubis atau yang sering disebut kol (Brassica oleracea) merupakan salah satu sayuran yang banyak mengandung vitamin, karbohidrat, protein dan mineral, namun sayuran tersebut memiliki umur simpan yang terbatas karena mengandung kadar air yang tinggi sehingga mudah rusak dan tidak tahan lama. Kol dapat diolah dengan proses fermentasi menjadi sauerkraut (asinan jerman)dengan tujuan dapat mengawetkan sayuran tersebut serta menghasilkan produk dengan sifat inderawi yang khas, khususnya aroma dan cita rasa.Penelitian ini bertujuan untuk menganalisis kualitas sauerkraut dari kol dengan variasi konsentrasi garam selama fermentasi.Analisis kualitas sauerkraut meliputi pengujian sifat fisik (susut bobot), sifat kimia (pH, Total Padatan Terlarut, kadar air, aktivitas air (Aw), vitamin C dan asam laktat) dan uji organoleptik. Data-data yang diperoleh di proses menggunakan analisis sidik ragam (ANOVA) pada tingkat signifikan P ? 0,05. Faktor yang diuji yaitu variasi konsentrasi garam terdiri dari 2,25% (Kontrol), 2,5%, 7,5% dan 12,5%.Hasil penelitian menunjukkan bahwa selama 7 hari fermentasi sauerkraut, perlakuan terbaik adalah terdapat pada perlakuan dengan konsentrasi garam 2,5% dan 2,25%. Nilai rata-rata untuk perlakuan dengan konsentrasi garam 2,25% adalah susut bobot 20,75%, pH 3,56; TPT 7,75%, vitamin C 7,41 mg/100gr, kadar air 90,93%, aktivitas air (Aw) 0,245 dan asam laktat 0,0096%. Sedangkan nilai rata-rata yang diperoleh untuk perlakuan dengan konsentrasi garam 2,5% adalah susut bobot 20,05%, pH3,69; TPT 7,55%, vitamin C 13,15 mg/100gr, kadar air 92,104%, aktivitas air (Aw) 0,245 dan asam laktat 0,0095%. Variasi konsentrasi garam pada sauerkraut berpengaruh nyata terhadap kandungan total padatan terlarut (TPT), susut bobot, kadar air, asam laktat, aroma, warna, rasa, tekstur dan penerimaan keseluruhan sauerkraut. Namun tidak berpengaruh nyata terhadap pH, vitamin C dan Aw sauerkraut. Berdasarkan hasil uji organoleptik sauerkraut pada semua perlakuan umumnya yang diminati panelis adalah pada perlakuan dengan konsentrasi garam 2,25% dan 2,5%.Nilai rata-rata yang diberikan panelis pada perlakuan dengan konsentrasi garam 2,25% adalah agak suka. Suatu tes hendaknya memiliki kualitas yang baik sehingga dapat mengukur apa yang hendak diukur.Penelitian ini bertujuan untuk mengetahui kualiatas tes ujian akhir semester. Jenis penelitian ini adalah penelitian kualitatif. Penelitian ini menggunakan dua analisis yaitu deskriptif kualitatif dan kuantitatif. Subjek penelitian meliputi lembar jawaban siswa dan lembar soal ujian akhir semester II yang dibuat oleh guru matematika. Jumlah butir soal yang diteliti yaitu terdiri dari 30 soal pilihan ganda. Lembar jawaban siswa berjumlah 56 lembar yaitu terdiri dari 56 siswa. Metode pengumpulan data yaitu dengan dokumentasi. Dokumentasi digunakan untuk memperoleh soal-soal ulangan akhir semester II Bidang Studi matematika kelas VII. Hasil pengolahan data yang telah dilakukan, maka diperoleh nilai koofesien validitas soal bentuk pilihan ganda pada ujian akhir semester II SMPN 1 Banda Aceh secara keseluruhan dari 30 butir soal memiliki tingkat validitas yang rendah (33,33% atau 10 butiir soal), reliabilitas yang tinggi dengan r11= 0,726, tingkat kesukaran yang sedang (63,33% atau 19 butir soal), dan daya beda yang tergolong jelek (46,67% atau 14 butir soal). Pada soal nomor 1, 2, 3, 4, 5, 6, 7, 8, 9, 10, 11, 12, 19, 20, 21, 22, 23, 24, 25, 26, 27, 28, 29 dan 30 yang termasuk kategori kognitif atau sebanyak 24 butir soal memiliki tingkat validitas yang cukup (41,67% atau 10 butir soal), reliabilitas yang cukup dengan perolehan r11= 0,622, tingkat kesukaran yang sedang (58,33% atau 14 butir soal), dan daya beda yang jelek (41,67% atau 10 butir soal). Sedangkan pada soal nomor 13, 14, 15, 16, 17 dan 18 yang termasuk kategori psikomotor atau sebanyak 6 butir soal memiliki tingkat validitas yang tinggi (60% atau 3 butir soal), reliabilitas yang cukup dengan r11=0,529, tingkat kesukaran yang sedang (66,67% atau 4 butir soal), dan daya beda yang baik (50% atau 3 butir soal). Hasil analisis butir soal secara kuantitatif terhadap soal tanpa validasi diperoleh 16,66% soal bermutu baik, dengan rincian sebagai berikut: (a) Terdapat 43,33% soal valid, (b) Koefisien reliabilitas tes sebesar 0,73, memiliki reliabilitas yang tinggi, (c) Tingkat kesukaran soal dengan kriteria sukar, sedang, dan terlalu mudah berturut-turut adalah 53,33%, 36,67%, dan 10,00%, (d) Persentase soal berdaya beda baik yaitu sebesar 60,00%, dan (e) Terdapat 68,33% pengecoh yang berfungsi. The wet digestion method was used for preparation sample prior to AAS detection. Sample was collected from three different location rivers at Lamnyong, Pantee Pirak and Lumbago. The result showed that the Pb and Cd concentration in fish and oyster at difference location were obtained not difference significantly. Pb and Cd contents in fish and oyster were found below lethal concentration.
