Sejauh ini penggunaan pati sagu belum dimanfaatkan secara maksimal dalam pembuatan mie. Penelitian ini bertujuan untuk mempelajari proses pembuatan mie sagu dengan menggunakan pengaruh persentase gel dan lama waktu perebusan untuk menghasilkan produk mie basah yang bermutu baik. Penelitian ini menggunakan rancangan acak lengkap (RAL) dengan pola faktorial yang terdiri atas 2 (dua) faktor. Faktor I adalah persentase gel pati sagu (G) dan Faktor II adalah lama perebusan (P). Faktor I Persentase gel pati (G) yang terdiri dari tiga taraf yaitu G1 = 10 %, G2 = 15 % dan G3 = 20 %. Faktor II Lama perebusan (P) terdiri dari tiga taraf yaitu : P1 = 1 menit, P2 = 1,5 menit, P3= 2 menit. Setiap perlakuan diulang sebanyak dua kali sehingga didapat 18 satuan percobaan. Analisis terhadap mie sagu meliputi kadar air, kadar abu, kadar serat kasar, persentase mie putus dan uji organoleptik (warna, aroma, dan kekenyalan). Hasil penelitian ini menunjukkan bahwa pengaruh persentase gel (G) berpengaruh sangat nyata (P?0,01) terhadap kadar air, persentase mie putus, warna, kekenyalan dan berpengaruh nyata (P?0,05) terhadap aroma. Persentase gel cenderung meningkat dengan meningkatnya persentase gel yang ditambahkan, sebaliknya semakin rendah persentase gel maka kadar air semakin menurun. Sedangkan lama waktu perebusan (P) berpengaruh sangat nyata (P?0,01) terhadap kadar air, persentase mie putus, warna, kekenyalan dan aroma. Interaksi antara persentase gel dan lama waktu perebusan (GP) berpengaruh sangat nyata (P?0,01) terhadap kadar air mie basah. Ketaklinieran persamaan Boussinesq menyebabkan solusinya tidak mudah ditentukan sehingga didekati melalui solusi liniernya. Metode ini berupa ekspansi dalam bentuk deret pangkat terhadap amplitudo elevasi yang dibatasi hanya hingga orde ketiga, dimana setiap suku dari deret tersebut bersifat linier. Selanjutnya solusi yang diperoleh dibandingkan dengan solusi yang telah ditemukan oleh Mohyud pada penelitian sebelumnya. Hasil dari perbandingan tersebut menunjukkan terdapat kesamaan pola kedua solusi. Namun perbedaan terjadi pada fase sebagaimana yang dimodelkan pada solusi masing-masing metode. Nonlinearity of Boussinesq equation causes the solution is not easily determined, so the solution is approached through its linearity. This method is in the form of power series expansion which is limited to third-order, where each tribe of the series is linear. Furthermore, the finding solution is compared with the solution that was found by Mohyud in previous study. The results of this comparison showed that there were similarities of the two solutions.
