Moisture content analysis showed that there were not significantly different among all treatments. However, antocianin and vitamin C content were significantly different in all treatments, and the best drying temperature was 50°C. The brightest color of dried rosella was produced by sun drying. However, all treatments were browning due to Millard reaction.</text>

This study was conducted to determine the fatty acids profile and medium changes fatty acids on coconut fresh and coconut milk. The fatty acids content of coconut fresh and coconut milk of saturated fatty acids (120.88- 84%) consist of C6:0, C8:0, C10:0, C12:0, C14:0, C16:0, C18:0. The monounsaturated fatty acids present was palmitoleic acid (C6:1c9) and oleic acid (C18:1n9) amounting to 15.7-16.2%, respectively. Critical moisture and water activity of coconut (Cocos nucifera L.), were analyzed for the first and second critical points of transition among the primary, secondary and the tertiery bound water fraction in the coconut. It was found out that the first critical points of moisture content and water activity were Mp of 5.22% db and ap of 0.30 respectively. The second ctitical points were water content Ms 12.4% db and water activity as 67% respectively. Coconut sample in the primary bound water fraction (represented by moisture content at 5.22% db), was stable in colour and appearance, but slightly rancid due to molecular mobility of the liquid oil content. The sample in the secondary bound water fraction (represented 12.4% db), has a colour change to darker brown, and in the tertiary bound water fraction (represented 90.5% db), mold growth appeared on the 12 days storage. Coconut indicated and Intermediate Moisture Food (IMF), because limited shelf life for few days at room temperature.</text>

<text>Infections caused by bacteria Methycillin Resistant Staphylococcus aureus (MRSA) has become a worldwide health problem because of its increasing incidence. Rosella flower (Hibiscus sabdariffa Linn) has been known to have efficacy as an antibacterial. The purpose of this study is to determine the antibacterial activity of rosella flower extract in inhibiting the growth of MRSA. This study is an experimental research laboratory using rosella flower extract as a treatment, vancomycin as a positive control and distilled water as negative control. Fresh and dried rosella flowers crushed and then macerated with 96% ethanol for 24 hours. The filtrate obtained was concentrated by rotary evaporator at a temperature of 35 ˚ C-40 ˚ C and then diluted to a concentration of 12.5%, 25%, 50% and 75%. Phytochemical test is then performed. S.aureus bacteria isolated from clinical specimens in RSUDZA. Test of the antibacterial activity of rosella flower extract performed using Kirby Bauer disc diffusion method. Parameters on the disc were measured in millimeters MRSA. The data obtained were statistically analyzed and grouped into categories of Greenwood (1995). Phytochemical test results indicate the presence of rosella flower extract contains flavonoids, tannins, saponins, triterpenoids and alkaloids. Test results of the inhibition of rosella flower extract concentration of 12.5%, 25%, 50% and 75% of the growth of MRSA each inhibitory zone formed with an average diameter of 14.2 mm, 19.2 mm, 22.8 mm and 24.18 mm, whereas the positive control and negative control respectively of 19.8 mm and 5 mm. The results of data analysis showed that the ethanol extract of rosella flowers significant effect in inhibiting the growth of MRSA by the value of p <0.05. Based on the criteria of Greenwood, rosella flower extract ethanol concentration of 50% and 75% belong to the category of strong inhibitory power in inhibiting the growth of MRSA, a concentration of 25% falls into the category of being and the concentration of 12.5% falls into the category of weak. The results can be concluded that rosella flower ethanol extract can inhibit the growth of MRSA.</text>

<text>Pegagan (Centela asiatica [L] Urban) contains alkaloid, flavonoid, saponin, triterpenoid and tannin that have antibacterial activity. Staphylococcus aureus and Klebsiella pneumoniae are most common of bacteria that cause pneumonia. This study conducted t odetermine the effect of ethanol extracts of pegagan in inhibiting the growth of S. aureus and K. pneumoniae that caused pneumonia. The type of this study is a laboratory experiment using a completely randomized design (CRD). Testing of inhibitory growth effect was measured by Kirby Bauer disc diffusion method. The results showed that ethanol extracts of pegagan at 12.5%, 25%, 50% and 75% concentrations formed inhibition zones on the growth of S. aureus, on average respectively of 7.00 mm, 9.20 mm, 13.20 mm, and 14.50 mm, whereas on the growth of K. pneumoniae, it didn’t form any inhibition zone. The results of ANOVA and Duncan (α=1%) tests showed that ethanol extracts of pegagan at all concentrations made a significant difference in inhibiting the growth of S. aureus compared to negative and positive control. The ability of ethanol extracts of pegagan to inhibit the growth of S. aureus at 12.5% and 25% concentrations categorized as no inhibitory growth effect, whereas 50% and 75% concentrations categorized as weak inhibitory growth effect. While the ethanol extracts of pegagan at all concentrations of the tests categorized as no inhibitory growth effect for K. pneumoniae. It can be concluded that ethanol extracts of pegagan inhibit the growth of S. aureus, but do not inhibit the growth of K. pneumoniae.</text>
