In general several varieties of Arabica are cultivated at the same altitude, which cause loss of their unique flavor of Arabica Gayo Highlands. This research was aimed to find out of superior varieties of Arabica coffee with a unique flavor score at a certain altitude and specific processing technique in the Gayo Highlands. There were five varieties of Arabica coffee observed. (Borbor, Bergendal, Ateng Super, Tim-Tim and Lini-S), in four altitudes: (1. < 1.000 m; 2. 1.000 -1.200 m; 3. 1.200 1.400 m; and 4. > 1.400 m above sea level). A survey method with descriptive analysis was used, based on altitude and land use maps on 20 observation sites. Ideal altitude of varieties were identified as nell as soil and barriers samples were analyzed. Arabica coffee varieties was determined by cluster analysis, correlations, followed by multiple regression. Evaluation scores of flavor varieties of Arabica coffee and altitude showed that Borbor variety was suitable at altitude > 1.400 above sea level, Tim-Tim < 1.200 m, and Ateng super at altitude 1.200 -1.400 m above sea level. Processing method of organic Arabica coffee which produced high flavor quality (taste) was a semi wash processing. Result of multiple regression analysis showed a very close relationship between land characteristics and score flavor criteria, R2 was 0.894. Determinants of the best and unique flavor is the altitude, climate and processing of organic Arabica coffee beansAbstrak. Beberapa varietas kopi Arabika umumnya dibudidayakan dan dikembangkan pada ketinggian tempat yang sama yang menyebabkan mulai hilangnya citarasa khas (unik) kopi Arabika dataran tinggi Gayo. Penelitian ini bertujuan menetapkan varietas unggul kopi Arabika organik yang mempunyai citarasa unik pada berbagai ketinggian tempat dan cara pengolahannya. Ada lima varietas kopi Arabika, yaitu: Borbor, Bergendal, Ateng Super, Tim-Tim dan Lini-S yang diamati pada masing-masing ketinggian tempat; (1. < 1.000 m, 2. 1.000 -1.200 m, 3. 1.200 -1.400 m dan 4. > 1.400 m di atas permukaan laut). Berdasarkan hasil menunjukkan varietas Borbor sesuai pada ketinggian tempat > 1.400 m, varietas Tim-Tim < 1.200 m, dan Ateng Super pada semua ketinggian 1.200 -1.400 m diatas permukaan laut. Tannin contained in sorghum can be reduced by using technology processing such as roasting. By using this way, husk of sorghum can be removed leading to decrease of tannin content which is reflected by the value of metabolism energy. The purpose of this experiment is to investigate the effect of roasted sorghum on metabolism energy of culled laying chickens. Measurement of metabolic energy as mathematic is used as comparison. The material used in his experiment was red sorghum, water, and 39 culled laying chickens. Equipment used in this experiment was balance, roasting tool, plastic, force feeding equipment, metabolism cages and bomb calori-meter. This experiment used completely randomized design consisting of 4 treatments and 4 replications (each replication 3 chickens). Treatment consisted of T0 = no roasted sorghum, T1 = roasted for 5 minutes and T2 = roasted for 10 minutes. Data collected were metabolism energy of roasted sorghum both biologically (force feeding) and mathematically (proximate analysis) at culled laying chickens. All data were statistically calculated, further statistically was conducted by using Duncan and compression of metabolism energy was calculated by using t-Test. The results show that, no statistically effect (p>0, 05) on duration of roasting on metabolism energy of sorghum. Based on t-Test analysis, there was a significantly difference (p<0, 05) between biological metabolism and mathematical metabolism. From this experiment, it can be concluded that 10 minutes of roasting cannot increase of sorghum metabolic energy. The average of biological metabolic was lower (3105, 94 kcal/kg) compared to the average of mathematical metabolic energy (3766, 82 kcal/kg). The study was conducted to assess the effect of the addition of tannins, saponin and their combinations on the feed, as defaunation agent in the dry matter and organic matter digestibility and ADF, NDF degradability. The study used an experimental method with a completely randomized design. The treatments were T0 : feed without supplementation; T1: feed supplementation with 1,2% saponin; T2 : feed with supplemetation combined of 0,5% tannin and 0,9% saponin; T3 : feed with supplementation combined of 1,0% tannin and 0,6% saponin; T4 : feed with supplementation combined of 1,5% tannin and 0,3% saponin and T5 : feed with supplementation with 2% tannins. The result showed that DMD and OMD increased with treatment added combination  of tannin and saponin.  The best result for DMD and OMD in combination of  1,5% tannin and 0,3% saponin.  Degradability of ADF and NDF was decreased on the supplemented feed.  The addition of a combination of tannins and saponins in the feed at dose of 1% tannin and 0.6% saponin showed the best result that increased of DMD and OMD and give good value on NDF and ADF degradability. This cervid has been protected by Indonesian Government since 1999. In order to support breeding program of the species and to avoid them from extinction, itsreproductive biology such as spermatogenesis and the correlation to semen quality is important to be investigated. Therefore, the objective of this study was to examine spermatogenesis and semen quality of two adult male muntjaks during antler growth periods that consist of hard antler (H), casting (C), andvelvet antler (V). Testicular tissues and semen (ejaculates) were obtained by core needle biopsy and electroejaculation methods respectively. Testicular tissues were processed histologically and stained with periodic acid Schiff (PAS) to observe spermatogenesis whereas semen was evaluated to obtaine itsquality. The results showed that spermatogenic activities were detected in all antler periods which marked by PAS positive staining (magenta colour) of round and elongated spermatid acrosomes. In H period, spermatogenic activity was higher than those C and V periods. According to semen evaluation,motile spermatozoa were found with different concentration in all antler periods. The highest sperm concentration (x 106 spermatozoa/ml) in both of muntjaks was found in H period (506.25 ± 61.87), and slightly decreased in C (288.75 ± 37.12), and V periods (362.60 ± 17.68). These finding showed thatspermatogenesis to produce spermatozoa is taken place while muntjaks are in C and V periods with differ activities that provable with the existence of motile spermatozoa from ejaculates in both of male muntjaks. This research was done in four treatment and periods usind 4 x 4 latinsquared design (LSD). All animals were fed native grass ad libitum as a basal diet. The treatment were P0 (DM without the addition of probiotic starbio), P1 (DM with the addition of 2% probiotic starbio), P2 (DM with the additionof 4% probiotic starbio), P3 (DM with the addition of 6% probiotic starbo), with average initial body weight 157,25 + 10,7kg. The result of this research indicated that the averages of feed consumption in dry matter (kg/head/day)sach as: (3,50; 3,69; 3,83 and 3,88 respectively); average daily gain (ADG) (kg/head/day) such as: (0,52; 0,56; 0,60 and 0,63, respectively); Average of feed convertion ration such as: (6,711; 6,640; 6,369; and 6,198,respectively) and IOFC (Rp) such as : (182,132; 204,071; 234,798 and 251,004, respectively). The addition of probiotic starbio in the DM has a very significantly different (P&lt;0,01) on feed intake and body weight gain of male bali cattle, however significant different (P&lt;0,05) with feed conversion ration male bali cattle. Hasil penelitian ini menunjukan bahwa ekstrak biji mahoni dengan konsentrasi 25%, 50%, 75% dan 100% masing-masing mampu membentuk zona hambat rata-rata 6,75 mm, 7,75 mm, 8,0 mm dan 8,75 mm. Sementara itu rata-rata zona hambat untuk dihasilkan oleh kontrol positif adalah 48 mm dan kontrol negatif adalah 5 mm. Hasil ini menunjukan bahwa ekstrak biji mahoni 25%, 50%, 75% dan 100% mampu menghambat pertumbuhan Staphylococus aureus yang dapat digolongkan dalam kategori sedang. Tiga puluh lima ekor tikus jantan, galur Sprague Dawley, umur 7 minggu dibagi secara acak ke dalam lima kelompok perlakuan. Kelompok kontrol (A) mendapat ransum semi purified yang mengandung 8% minyak jagung. Kelompok perlakuan masing-masing disuplementasi 4,5% minyak ikan (B), 3% minyak ikan+1,5% amida (C), 1,5% minyak ikan+3% amida (D), dan 4,5% amida (E). Ransum perlakuan diberikan selama 6 minggu. Pada akhir penelitian dilakukan pengambilan sampel darah untuk menganalisis nilai hematologi dan profil lemak plasma. Hasil penelitian menunjukkan bahwa suplementasi amida minyak ikan dapat mempertahankan jumlah eritrosit dan Hb, namun nilai hematokrit mulai menurun pada suplementasi amida 3% (D), dibandingkan suplementasi minyak ikan (B) dan suplementasi amida 1,5% (C). Jumlah leukosit pada kelompok yang mendapat suplementasi 4,5% amida (E) secara nyata (P<0,05) lebih tinggi dibandingkan dengan kelompok yang diberi minyak ikan (B). Suplementasi amida minyak ikan tidak berpengaruh terhadap konsentrasi kolesterol total dan HDL plasma, namun pada suplementasi 3% amida mulai meningkatkan konsentrasi trigliserida dan LDL plasma secara nyata (P<0,05). Disimpulkan bahwa suplementasi amida sebesar 3% mulai memperlihatkan pengaruh negatif terhadap nilai hematologi dan profil lemak plasma.
